Two days off of school which means we are all going to want something super simple for dinner so we don’t have to break our relaxation mode on a four day weekend. I’m alone with all our boys this weekend – hubby is away and our daughter is away, so we are excited to have some easy meals to get our week started. Pasta E Fagioli is a classic heart warming soup. We love that this can be a slow cooked fill the house with aroma all day soup, made ahead or whipped up last minute. Double the batch and freeze in ready to go containers for easy lunches.
This Chinese Chicken Salad is a super quick meal. It can be tossed together in 10 minutes. We will be replacing the sugar with honey in this recipe. We always have cooked chicken here ready to go.
Our kids are always up for a crustless quiche for dinner. I love that I can pop it in the oven then run out to pick everyone up after school and it’s ready shortly after we return. We love this Southwest Style Quiche bonus it’s gluten free – we also often will use canned unsweetened coconut milk to replace milk in quiche recipes if you need dairy free also. Toss an extra in the oven for lunch or breakfast later in the week!
