Our very own Beef & Lentil Soup is perfect for a week night dinner. It is so comforting and soothing after a long day. Again, it can be made ahead and either stored in the fridge for a few days or frozen. Whenever I make soup I try to double the recipe and freeze the left overs in mason jars to be pulled out for lunches throughout the weeks.
Sometimes we just need to toss in a super simple pasta dish because here the young ones just love their noodles, and we usually have someone ‘carb loading’ for a race or football game. This has a great depth of flavor so it’s super pleasing for all taste buds. Want to add some protein to this Lemon Basil Pasta? How about a few grilled shrimp or chicken strips. This would also make a great last minute guest meal since here at least we always have these items on hand.

Who doesn’t love a meatball sub? Well, I’m sure there is someone but it’s not us. These Chicken Meatball Sliders are a perfect fun dinner. I will again make these meatballs ahead of time so all I have to do is heat them up on the day we have them. And yeah an extra batch will most likely be put into the freezer 🙂

Our kids love eggs in the morning…but I don’t always feel like making them. We have done similar little egg cups like this and they are always a hit. We have even frozen them (seems to be a theme this week) and the kids microwave them and off they go. 100% worth the time to make ahead of time. These Egg Cups are full of veggies and flavor!
