All things fall are going on here! This is my absolute favorite time of the year, hands down! Nothing compares to the crisp north east air, slowly floating colored leaves flipping through the air, the warmth of blankets and scarves, being outside and not freezing or sweating…in my opinion it is sheer perfection and nothing less. So while deciding on what recipes to do this season I started thinking of things that made me think of this time of year and tada…Apple Butter! This slow cooker apple butter is to die for.
Every year I want to go to an orchard and just never seem to make it. So I just dug though the bins of apples at our local grocery store for some fresh organic apples. I figure they came from an orchard somewhere right? Since I didn’t make it there I figured I’d make the rest of the ambiance myself. Let me just tell you how amazing it makes your house smell to cook this apple butter. As each kid came in the house while it was simmering they said, “what smells so good?” This slow cooker apple butter slow cooks for a few hours filling every inch of your home with the warm scents of apple, clove, cinnamon….amazing! And better than a candle because you end up with delicious apple butter too! The hardest part of this recipe is peeling and slicing the apples. And it’s not that many apples so it takes about 10 minutes if you aren’t in a hurry.
I made it over the weekend but didn’t get a chance to blend it. My daughter came home from work yesterday and wanted to know the status of the apple butter. So she decided to blend it for me. She then proceeded to spread it all over an English muffin. I believe she had ulterior motives. This morning she gave me a run down of what else it would be amazing with…vanilla ice cream, waffles, waffles & ice cream… It also makes an awesome gift. I freeze it in jars that I collect from other products that I buy. I always love a good jar I didn’t have to buy. You can also make your own fun labels if you want. So much fun!
Of course I used unrefined sugar because that’s just what I do. You can use regular sugar or maple syrup in this recipe as well – if you use maple syrup you may just have to cook it uncovered for just a little longer so the liquid reduces.
- 6 large apples (we used Fuji... your favorite, any baking apple works great!)
- 1 cup coconut sugar
- 1 TBSP apple cider vinegar
- ¾ tsp cinnamon
- 1½ tsp cloves
- ½ tsp nutmeg
- ½ tsp salt
- Peel, core and chop apples.
- Add all ingredients to slow cooker.
- Cook covered on HIGH for 5 hours. Stir occasionally (not necessary, but I can't not)
- Uncover and continue to cook for an hour or until liquid reduces by half.
- Put in fridge to cool off. Once cool blend until smooth.
- Add to jars. To freeze be sure to leave at least a ¼" of space for expansion.
- Apple Butter will last in the fridge for about a week.
