Pull out the crock pot this week! I always try to include at least one crock pot meal for the week, but happened across a few and I’m just in that mood – set it and let it go! We’ve had a lot of overcast mornings and that just sets me up for a blah day and I don’t feel like doing much, so the easier the better. Besides who doesn’t love having only one pot to wash? Make sure you put your thinking cap on and get creative with some of these recipes – some are vegetarian, but can easily have some shredded chicken tossed in or used as a side to a piece of fish or a steak thrown on the grill. Oh goodness don’t these look amazing?!? Chicken and Couscous Stuffed Peppers! If you want to make them gluten free just sub in some quinoa or rice. These can easily be made ahead of time and heated up – and why couldn’t you pop these in the crock pot too?
Have you ever made a baked potato in the crock pot? Me either! I can’t wait to try this out. We’ve done loaded Baked Potatoes in the past and it’s always been a hit. It’s also a great way to use up some left over ingredients like bits of chicken, veggies, cheese, bacon…who are we kidding who ever has left over bacon? Serve with a huge salad and you’ve got a meal nobody will resist!
Ok maybe not always budget friendly, but if you keep an eye out you will likely be able to hit a flash sale at some local market for salmon. Salmon is our go to fish at our house, and honestly we can’t get enough of it! Like I could eat it every day honestly! This Grilled Blackened Salmon tops the list of recipes we love – sound hot hot hot – no worries it comes with a recipe for a cool cucumber dill sauce!
Pull your crock pot back out for this one~ Turkey Tacos! YAY! We love tacos here and often go to ground turkey instead of beef. You can really use either here but if you haven’t yet tried the turkey go for it – I promise your family won’t even notice.
Full honesty disclosure here, I wasn’t so sure about this one – but IT IS AWESOME! Roasted Brussel Sprout Caesar Salad soooo good and just a nice change of pace to a traditional Caesar Salad. Add some grilled flank steak or a rotisserie chicken and wow what a meal!
