Protein Freezer Waffles

If your mornings are anything like ours, you want something you can quickly produce in front of your child while you aimlessly wonder around the house looking for where you set your coffee down.  I also want to be sure that whatever I put in front of them has a little ‘stick to the ribs’ about it because who knows what time they all eat lunch.  Our youngest has a thing for maple syrup, and although on occasion I will whip of a batch of pancakes on a week day, I try to stick to something that get’s popped into the toaster.

I grew up with homemade waffles, and got a Belgian waffle maker for our wedding…well do you know what happens when you try to feed 6 people waffles when you can only make one at a time?!?! I do – they all eat,  you stand in the kitchen all morning then you eat your waffle while you do the dishes and everyone else has moved on…yeah NOT happening.  So my amazing father, who also loves a good waffle and likes to shop found us a waffle maker that makes 6 at one time! WooHOO!!! Life changing!

I stumbled upon the base of this recipe in the booklet from Cuisinart that came with the machine…it was pretty good, but you know I needed to change it up to add just a little more of a healthy punch.  This original recipe was called Protein Waffles….so these are packed with protein and lots of other healthy things that because they are waffles and you include some of the sweet sticky stuff on top, nobody knows any different!

Yeah the recipe calls for cottage cheese, which I normally would never buy nor eat, I include, however I toss it into the blender so it gets smooth because I don’t like the little pieces of curd in my waffle – didn’t seem to bother anyone else here so that step is definitely up to you. Otherwise, my directions for this are simple – whisk all the wet ingredients together in a big bowl, then dump all the dry ingredients on top and mix it up!  I put the waffle iron on high and wait until it is really hot before I start cooking.  Mine is non-stick but I spray it with cooking spray because these do stick with all the crazy ingredients in them.  I also cook then past a few ‘beeps’ of the machine indicating they are done – I like them really done and if you open it too soon then well it’s kinda a mess…

Protein Freezer Waffles
8 eggs
1 1/2 cups apple sauce
2 cups cottage cheese
4 cups milk
finely grated (microplane is awesome) apple
6 cups old-fashioned oats
3 cups flour (I use King Arthur white wholewheat – or if I’m out I use half wholewheat and half unbleached)
1/2 cup sugar
8 tsp baking powder
2 tsp cinnamon
1 tsp salt
5 TBSP Chia seeds
I put two average size ladle scoops in the waffle maker at a time and spread it out so each square gets as equal as possible.  Once they are all cooled I wrap three squares together in non-wax paper sheets and store in a large plastic container in the freezer – that way they are portioned and the kids can grab and pop them into the toaster themselves!
