You know those days when you just don’t have another ounce of energy to cook dinner…oh and how about when you come home to find you forgot to take the meat out of the freezer…now what? Spend a ton of money ordering out, or rummage through the pantry to find something to toss together that will satisfy everyone? I 99.99% of the time chose the second option to stick to our budget. Pasta and canned beans are staple items here, and I highly recommend you stocking up on them as well. Makes a great simple, even the pickiest kid happy meal. The best part is that you can totally make like 100 variations of this dish, which I will list just a few of our favorites.
This also doubles as an amazing cold ‘pasta salad’ for lunch the next day too! High Five on that one! Heat it up and toss it into a thermos for a hot lunch in the cafeteria or a day on the go from meeting to meeting. Whatever you chose, comforting pasta mixed with some protein is always a welcome choice. And if you have teens involved in sports, it makes a great carb load up meal as well!
Last Minute Pasta
1 lb pasta of choice
1 can Beans
1 head of broccoli
2 gloves of garlic, or you can add garlic powder if you don’t have fresh, just sprinkle it on the broccoli as it’s cooking as well as add to the sauce to flavor the oil as well.
1 lemon, juiced
3 TBSP olive oil
grated Parmesan cheese
fresh basil if on hand
While pasta is cooking, steam or saute broccoli, set aside. Add olive oil a pan on medium low. Add garlic and saute slowly to flavor the oil but not turn the garlic brown. Add the lemon juice to the garlic along with a pinch of salt and a ladle full of the pasta water. Drain pasta, toss with sauce, broccoli, beans and cheese. Easy as that! Enjoy!
