If there is one salad our family can agree on it’s the classic Caesar! So when it was time for me to chose a recipe from my friend Kimberly over at Berly’s Kitchen. Funny thing was the recipe I chose kept making reference to Kimberly…it doesn’t take much to confuse me…after a little research I realized the recipe was from her husband John! So fun! I love seeing other family run businesses! It looked so amazing I couldn’t not try it out – besides I needed something different for dinner and this Parmesan Covered Chicken Caesar Bread sounded like a winner right out of the gate.
One of my favorite things about the blogging world is that it’s like this tiny (although huge at the same time) community. Being a part of this Recipe Swap Club has been so great. We support each other and have the most amazing recipe collections to chose from. I have admired Berly’s Kitchen from the start. They have some really great recipes that seem complex due to the flavors but are super simple to make. Kimberly hasn’t even been cooking for very long, and like us has a desire to inspire others to cook simply and affordably at home. This is surely a simple recipe that can be either an appetizer or as you’ll see we made it a meal!
The only change I made to the original recipe was the cooking part – it was a beautiful spring day when I made this so I fired up the grill and grilled the whole recipe. This will be super fun to do over the summer when we have company outdoors. I really loved that I had all the ingredients already except the bread. Soooo, my one grater was dirty and I was too lazy to take it out of the dishwasher to wash it so I used a micro-plane to grate the cheese and it was so fine it didn’t melt…not sure why, anyway, just wanted to make a side note of that, it was still delicious anyway! Besides the whole family loving this, it took me back to my days working in down town Philadelphia. There was a small bakery around the corner from the architectural firm I worked at that made fresh bread daily – then they cut it in half and stuffed it with your choice of items…my favorite was to stuff it with chicken Caesar salad for lunch. The bread was so warm and fresh – yum!
Parmesan Covered Chicken Caesar Bread
- 3 Boneless Skinless Chicken Breast
- 1 Tablespoon of Italian Blend Seasoning Mix
- 1 Tablespoon of Garlic Powder
- Shredded Parmesan Cheese (original recipe called for 2 ounces, I don’t know how much I used, I just grated it over the top 😉
- 8 Tablespoons of Creamy Caesar Dressing (Your Favorite Brand or Homemade)
- Loaf of French Bread, I used an artisan style bread from our local grocery store
Preheat grill – I always pound my chicken before cooking it between two pieces of plastic wrap or wax paper…then sprinkle with the Italian seasoning blend and garlic powder. Grill chicken – about 10 min total (I make it pretty thin). Let the chicken rest while you cut the bread in half length wise. I grilled the bread face down for about 3 minutes, then drizzled it with the Caesar dressing, sliced the chicken very thin and piled it on top of the bread. Oh yeah I did add an extra ingredient, some fresh basil that I had that was going to die if I didn’t use it…sliced thin and sprinkled on top of the chicken. Then add the Parmesan cheese to the top and return it to the grill for about 8 minutes. Take off the grill and cut into pieces. We had larger pieces and I served it with a small green salad and everyone was VERY happy!
