This is such a strange time of year -it’s still cold some days which leaves me craving those cozy heavier one dish meals, while other days it’s warm and I want to fire up the grill. I know, what a struggle right? So this week I pulled together a variety of dishes that should satisfy this week’s change of season weather patterns nicely. I have my Grocery & Meal Planner Sheet already on the fridge with what we are running low on and will pull it down to add the ingredients I need for these meals before I hit the grocery store! So much better than randomly buying and then trying to come up with something – not that I don’t like a challenge or being creative in the kitchen but sometimes we just don’t need to think anymore!
Time for Dinner!
Less clothes weather 😉 is around the corner so this light Super Greens Stir Fry is perfect for staying on track for your healthy eating plan or for anyone who likes a nutrient rich meal. The greens are simple and you can toss in a protein of your choice – chicken, shrimp, beef…soooo good and sooooo good for you!
For those warmer days you just need it to be summer already, try these French Onion Cheeseburgers! I don’t really think they need anymore of an introduction than that.
My kids love recipes like this Chicken with Broccoli Tortellini with Alfredo Sauce. I do too because it usually keeps them full for more than 15 minutes and I can do the dishes before they come back for something else to eat! Anyone else struggle in this area??? Just me? Hoping I’m not alone here! Alfredo, tortellini…I don’t think you can go wrong here!
While are on pasta, let’s just stay with pasta shall we? It’s honestly always a hit here, except for our daughter but she would totally love it minus the pasta…or over mashed potatoes, that’s her love language I’m pretty sure! This Easy Goulash with Corn & Kidney Beans is a great busy weeknight staple. If you have little kids just leave out the Goulash part – or say it and take their picture to capture their reaction, something about that word… 😉
When you want pizza but spring is in the air…you have to try this Kale Pizza! Super simple easy ingredients and super budget friendly too! Who doesn’t love pizza anyway? The kale gives it a nice spring feel too – LOVE!

A Little Something Sweet
Like I’ve said before, we aren’t huge dessert people around here, especially during the week, but sometimes you just need a little something sweet…and one of my favorite things is Key Lime…in any form. Â Love that tartness. Â How fun is this, and so easy to store in the fridge, fun to pack in lunches too or take to a party! YUM YUM YUM!!! This Sweet-n-Tart Key Lime Cheese Cake Dip is sure to please EVERYONE and screams ‘summer is coming’ to me!
