One of our boys favorite dinners is Enchiladas. So when I was thinking about something festive for Cinco de Mayo I immediately thought of enchiladas. How do I turn that into a party food? Maybe I should go the salsa route??? I love a good salsa but wanted something hot to share. Since more and more people are looking for a vegetarian dish as well, I thought I would include my enchilada bean smash with all the other ingredients and just leave out the tortillas…the result was AMAZING! This hot full of flavor dish is sure to be a hit with everyone at your fiesta!
Enchilada Bean Dip
1 can black beans
1 small onion
1 tsp cumin
1/2 tsp garlic salt
4 oz can green chiles
1/4 cup enchilada sauce
1 cup of cheese
In a small sauce pan combine first 4 ingredients with 1/2 cup of water. Simmer uncovered until the water reduces by half and the onions are soft. Mash with a potato masher until most of the beans are smashed, we like to leave some bits in there. Put in the bottom of a oven safe dish, add the chiles then the enchilada sauce, top with cheese. Bake in a 375 oven for 15-20 minutes until the cheese melts and gets bubbly! Enjoy!
