Wow, I can’t believe another week has slipped away. Have you ever had one of those weeks that seemed to drag on and yet at the same time once Friday rolled around it seemed like you couldn’t even remember Monday? That’s what my week was like! So very thankful for this weekend time with our family though. And while we love our family down time, I am always looking forward what a new week will bring. Food wise, this week is bringing some super fun things! From slow cooker meals to stir fries and a hot breakfast, this week has some thing for everyone. Make sure you grab this week’s Grocery List here with all the ingredients listed for you to make all these meals- remember you can edit it too to adjust quantities, take things off you already have or add additional items you need. Enough dilly dally time, let’s get to it!
This Cheesy Pasta Bake is a winner for sure. Add additional veggies … switch up or leave out the meat. Throw your own little twist on it to be sure everyone is excited for dinner time! Kid’s don’t love veggies? No worries, blend them up and add them to the sauce – I’ve done it more then once!
Sometimes I just want to toss everything together and shove it in the oven! Hopefully I am not alone here. If you’re like me then you will love this One Pan Pesto Chicken and Veggies. I don’t know it just makes me feel accomplished and who doesn’t love just having one pan to wash – that alone should make you want to make this dish!

Black Beans and Rice – and veggies! Add some grilled shrimp or leftover chicken or have it alone – the flavors of this dish are amazing!
A staple here is a quick stir fry – but we kind of get tired of the same old flavors. You too? Wake up your chicken stir fry with this Stir Fried Chicken with Lemongrass and Black Pepper. While it does have a lot of ingredients, just prep them ahead and toss into baggies in the fridge so its all ready to go when you are!

On occasion I make the kids a hot breakfast during the week that wasn’t pre-made and frozen for them to microwave. If you have everything prepped the night before this takes 5 minutes to put together and toss in the oven while you enjoy your coffee before you wake the peeps. We will be making this Southwest Tater Tot Breakfast Bake on the next race day morning, I know the boys will be excited!
