These mini meat loaves are the cutest thing ever! And don’t even worry if you have the pan or not, I have made mini meat loaves before and just put them on a foil lined baking sheet. Meat loaf is a favorite here and there is just something about making things mini that appeals to everyone! These are a definite make ahead and freeze for those crazy schedule nights.
Portabella Mushrooms…creamy mashed potatoes…yuuuum! While I know only 3 of the 6 of us will eat these mushrooms, it made the list because I will just make enough of those mini meat loaves for the other 3 to have when we have these. I love having one non meat dish a week and this will surely be one we make time and again.
Chicken and Beef skewers with veggies. I don’t know about you but my kids will eat almost anything off of a stick. The weather is still great for grilling (well I think that all year) so be sure to keep on using it. This is a super simple recipe and you can prep everything ahead of time to make actual dinner prep easy.
Instead of turning to take out, choose a healthier option for your family with this Orange Chicken recipe. Asian inspired cuisine is always welcome here and this meal was no different. Plus we made extras to have for lunches for some of us this week!
Instead of a regular salad mix up a tasty Buddha bowl instead. Line up the ingredients as an assembly line and let everyone add in their favorite ingredients. I prep everything over the weekend for this meal to keep it super simple during the week.
